Asia on a Plate: A Feast of Cultures Comes Alive at Shangri-La Colombo

There are moments when food becomes more than a meal—it becomes a passport. This June, Shangri-La Colombo invites diners to travel through the heart of Asia without leaving the city, as Asia on a Plate takes over Central for ten unforgettable nights of regional cuisine, culture, and creativity.

Running from 27 June to 6 July 2025, the festival is a celebration of six distinct culinary traditions brought to life by seven master chefs hailing from Shangri-La properties. Each night, the buffet transforms into a live performance—complete with action stations, smoky grills, and dishes that tell stories older than recipes.

At the helm of this gastronomic journey is Chef Su Machang, who introduces diners to the delicate precision of Chinese dim sum and the bold punch of Sichuan-style flavours. Chefs Maneesh and Mandeep carry the flag for India, offering aromatic curries and tandoori classics infused with spice and soul. From the home team, Chef Uresh reimagines Sri Lanka’s finest—think perfectly crisped hoppers, clay pot crab curry, and fiery lunu miris that dances on the tongue.

Then comes the soulful simplicity of Myanmar, led by Chef San Myint Lwin, whose bowls of mohinga and tamarind pork belly bring the comfort of a family kitchen. Miss Nisa Yimthong, from Shangri-La New Delhi, represents Thailand with the finesse the cuisine is famed for—mango sticky rice, raw mango salads, Tom Yum Goong and Pad Thai, all crafted with balance and intensity. Finally, from the bustling kitchens of Shangri-La Jakarta, Chef Dewa stirs the heart of Indonesia into every bite, from rich beef rendang to charcoal-grilled satay skewers and earthy gado-gado.

The menu reads like a love letter to Asia’s most cherished dishes. Live stations serve dim sum and noodle soups on rotation, while carving stations showcase herbed grilled chicken, Chinese-style roast pork, and Balinese duck slow-cooked to perfection. Salads and appetisers cross borders—from pickled ginger and tofu skins to Javanese prawn salad and Burmese chicken rice. Mains feature stir-fried cuttlefish, eggplant in hot garlic sauce, coconut-based stews, and signature curries that deliver comfort with every bite.

Vegetarians won’t feel left out. There’s Sayur Lodeh (a coconut-infused vegetable curry), Thai red curry vegetables, and wok-fried greens in spicy sambals. And when the savoury courses end, desserts shine: silky almond jelly, sesame balls in syrup, sweet semolina cakes, and Dadar Gulung—bright green pandan crepes filled with jaggery-kissed coconut.

Set within the modern, airy space of Central, the festival promises more than a meal—it’s an immersive celebration of craftsmanship, culture, and the connections we share through food.
